Ingredients
1lb. ground beef
1 can diced tomatoes, undrained
1 cup long-grain white rice, uncoooked
1 medium green pepper, chopped
1 small onion, chopped
1/2lb (8oz) velveeta cheese, sliced
Directions:
1. Brown meat in large skillet on medium-high heat; drain
2. Add tomatoes with their liquid, rice, green pepper, and onion stir; cover, reduce heat to medium low, simmer 25 minutes, stirring occasionally
3. Top with velveeta cheese continue cooking covered until cheese is melted.
Prep: 10 mins
Total time: 40 Minutes
Servings 4 (1-1/2 cup)
